We have had more than a week with sunshine and blue sky and our beautiful city of Copenhagen shines more than ever. Love these little lemon muffins with poppy seeds perfect for those sunny days with the right balance of sweetness and sourness, so I want to share them with you.

Instructions

  1. Mix the dry ingredients together.
  2. In another bowl, mix the wet ingredients.
  3. Combine. Do not overmix.
  4. Bake in 375 F / 190 C for about 20 min or until tops are golden brown

Ingredients

  • 2¼ cups all-purpose flour 313g
  • 2 teaspoons baking powder 8g
  • ¼ teaspoon baking soda 2g
    2 tablespoons poppy seeds 23g
    1 cup sugar 186g
  • 2 tablespoons lemon zest 6g
  • 1 cup yogurt 245g
  • ½ cup unsalted butter melted (113g)
  • 2 large eggs 110g
  • 1 tablespoon fresh lemon juice 15mL
