Instructions

  1. Melt the butter and let it cool down.
  2. Whisk the flour, baking soda, cornstarch and salt together in a large bowl. Set aside.
  3. In a separate bowl, whisk the melted butter, brown sugar, and granulated sugar together until no brown sugar lumps remain. Whisk in the egg and egg yolk. Finally, whisk in the vanilla.
  4. Pour into dry ingredients and mix together with a large spoon or rubber spatula. The dough will be thick, and appear greasy. Fold in the chocolate chips.
  5. Cover the dough tightly and chill in the refrigerator for at least 2 hours or if you bake in several batches, you kan keep up to 3 days. Longer you chill the dough, less spreading there will be.
  6. Preheat oven to 325°F (163°C). Line large baking sheets with parchment paper or silicone baking mats. Set aside.
  7. Using a cookie scoop or Tablespoon measuring spoon, roll into balls of equal size. Place the balls of dough onto each cookie sheet.
  8. Bake the cookies for 10–13 minutes or until the edges are very lightly browned. The centers will look very soft, but the cookies will continue to set as they cool. Cool on the baking sheet for 10 minutes.

  • 1 teaspoon baking soda
  • 1 teaspoon corn starch
  • 1/2 teaspoon salt
  • 170g unsalted butter.
  • 150g brown sugar
  • 100g granulated sugar
  • 1 large egg + 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract or vanilla sugar
  • 225g semi-sweet chocolate chips or chocolate chunks
