Having lived in Hong Kong for many years, my kids grew up with noodles and dumplings and those are still some of their favourite meals. Is the Asian version of fast food. Here I share you my ramen recipe that is easy, quick and packed with flavours.

  • Cook-time-15-20 minutes
  • Total Time:25-30 minutes
  • Yield:4 servings

Instructions

1. Heat the oil, add ginger, garlic, onion, jalapeño and cook for few minutes

2. Add the soy, fish and oyster sauce and peanut butter. Cook for another minute.

3. Add about 8 cups of water and let it simmer for about 15-20 min or if you have time, let it simmer for longer. The flavours will only intensify.

4. In the meantime, cook the noodles in boiling water separately according to the instructions of the pack.

5. Assemble all together, the broth, the noodles and top with freshly cut spring onions.
Optional: top with soft boiled egg, jalapeño slices, sesame seeds, cooked pak choi.

Ingredients

  • 4 tbsp sesame oil or vegetable oil
  • 4 tbs fresh ginger, grated
  • 2 tbs garlic, minced or chopped
  • 2 tbs jalapeño, chopped
  • 4 tbsp spring onions, chopped
  • 4 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 2 tbsp peanut butter
  • 4 blocks dried noodles
