Raspberry Slices

I want to share with you one of my favourite Danish pastries. It is said that this treat was invented in Skagen, a picturesque village in the northernmost part of Denmark,  back in 1700s. Today, you can find them in every bakery in Denmark, and it is real classic in Danish cuisine, loved by both adults and children alike. What’s so great about them? Well, you get a crispy, buttery cookie crust with tangy raspberry filling inside, making it a delicate indulgence fit for any occasion.

  • Cook-time-5 minutes
  • Total Time:30 minutes
  • Yield:20 pcs.

Instructions

  1. In a large bowl or food processor mix the butter, flour, powdered sugar, vanilla, and egg until the dough is nice and uniform.
  2. Divide the dough into two equal sizes and let it chill in the fridge for about 1 hour.
  3. Roll out with a baking pin each portion between two baking sheets so they are around 1/8 - 1/5 inch (3-5 mm) thick and equally sized.
  4. Bake at 350 F (175 C) for about 12 minutes or until lightly golden and let them cool off.
  5. Spread raspberry jam on one sheet and place the other sheet on top.
  6. Prepare the icing mixing the icing sugar and boiling water and spread it on the top sheet. Sprinkle with freeze-dried raspberries and cut them into equally sized smaller squares.

Ingredients

  • 200 g (7 oz) Cold butter
  • 350 g (10.5 oz) Flour
  • 150 g (5 oz) Icing sugar
  • 1 tbsp Vanilla Essence
  • 1 egg
  • 10 spoons of Raspberry Jam
  • 200 g ( 7 oz) Icing Sugar
  • 2 tbsp Boiling water
  • Freeze Dried Berries
