Smashed Cucumber Salad

This Smashed Asian Cucumber Salad is incredibly refreshing - perfect for summer. Packed with flavor from the dressing and fresh herbs, it's low in calories and pairs easily with a variety of dishes. It also works perfectly as a light, stand-alone meal. Best of all? It takes just 10 minutes to make. Enjoy!

Instructions

  1. On a cutting board, lay a large knife flat against the cucumber and gently smash it with your other hand. The cucumber should crack open. Repeat along its full length. Once the whole cucumber is split open (usually into a few long sections) cut it into bite-sized pieces.
  2. Chop the herbs and slice the chili finely. The chili pepper, once mixed with the dressing, will quickly lose its strength and will add just a subtle depth to the salad.
  3. In a large bowl, combine the chopped cucumber, herbs, and chili. Add the sesame oil, soy sauce, rice vinegar, and sweet chili sauce. Toss everything well to coat.
  4. Serve garnished with sesame seeds or chopped peanuts, and a few fresh herbs on top. Enjoy!

  • 2 seedless cucumbers (about 1 to 1 1/2 lbs; 600g)
  • 2 teaspoons sesame oil
  • 3 teaspoons soy sauce
  • 1 1/2 tablespoons rice vinegar
  • 1 red mild chili pepper (optional)
  • 2 teaspoons chopped peanuts or sesame seeds for topping
  • a small handful of chopped thai basil, mint or cilantro
